An easy gluten-free flourless cake, using every part of the orange and ground sunflower seeds (aka sun-flour).

A little spin on the whole orange and almond cake that is so easy to make it can become a little bit addictive. The added cacao makes it feel rich and decadent.
It’s so nice boiling the fruit as it makes the whole house smell delicious (I do it in the slow cooker on low and leave it for around 4 hours).
The sunflower seeds make a nice change from almonds which can become a bit same-y if you make a lot of gluten-free bakes.

Whole Orange, Cacao & Sun Flour Cake
Ingredients:
- 1 large orange
- 3 eggs
- 125g ground sunflower seeds (can be pulsed in a blender to grind)
- 125g coconut sugar
- 1 tsp baking powder
- 3 heaped tsp cacao powder
- 1 sliced orange for decorating (optional)
Recipe:
- Boil the orange in water for nearly 2 hours , until completely soft, then leave to cool.
- Once cool, slice and remove the pips and blend into a pulp.
- Grease and line a 20cm round cake tin.
- Preheat the oven to 190°C / Gas mark 5.
- Beat the eggs in a large bowl.
- Add the ground almonds, sugar, baking powder, cacao powder and the orange pulp.
- Pour the cake mixture into the cake tin and bake for 1 hour.
- The cake is ready when a fork is poked into the centre and comes out clean.
- When cooled arrange the sliced oranges on top for decoration.
