Kombucha Scoby Fruit Rolls

A little sweet tasting snack to make with an abundance of SCOBY’s. This recipe always feels a bit like a magic trick, I love turning a slimy SCOBY that isn’t the most appetising thing into something delicious and enjoyable.

Kombucha Scoby Berry Fruit Rolls

Everytime you make a new batch of kombucha a new SCOBY is normally formed. I have lots of them collected in a SCOBY hotel (a kilner full of SCOBY’s that I top up with a little sugary tea every now and then to keep them happy) this comes in handy for giving to family and friends, creating new kombucha flavours and making snacks from, like these roll ups. The SCOBY’s still grow and get thicker over time in the hotel and the older ones start to become a bit darker in colour, it is when they become slightly darker that I use them to make something in the kitchen, it makes a bit more space in the hotel for the rest of the hotel guests to grow.

Kombucha is renowned for being high in probiotics and good for our gut health. It contains antioxidants and supposedly can kill any bad bacteria we have lurking in our guts (such as reducing excess candida yeasts). Just as kombucha is good for the gut, the SCOBY has similar benefits when eaten too.

Kombucha SCOBY Fruit Roll Ups

Ingredients:

  • 1 x kombucha SCOBY
  • 1 x handful of berries (or fruit of your choice)
  • 1 x tbs honey or maple syrup (optional for added sweetness)

Recipe:

  1. Place all the ingredients in a food processor and blend until smooth.
  2. Using a spatula smooth out the paste onto a baking tray lined with greaseproof paper – you want the mixture to be about 0.5cm thick ~ it will shrink down as any liquid is evaporated.
  3. On a hot sunny day you can put the tray in the sunshine to dehydrate in a couple of hours. On colder days place in an oven set to 50c and leave for 3 – 4 hours until the mixture has dried out.
  4. Keep checking the hydration levels every few hours ~ you will know it is ready when the mixture is dry to touch and will easily peel off the paper.
  5. Using scissors, cut the paper and dried fruit into strips of your chosen width, peel off the greaseproof paper and roll into little bitesized snacks (the paper can be left on if you prefer and peeled off just before eating).
  6. The fruit rolls can be enjoyed straight away or stored in an airtight jar and eaten within the next few days.
